Σκεπαστή Κιμαδόπιτα

Covered Minced Meat Pie


1 package KANAKI PIZZA Dough
½ kg minced beef shoulder
3 tbsp olive oil
1 tsp paprika
1 tsp chilli powder
200 gr. mature graviera cheese
1 tbsp cream cheese
2 tbsp thyme
3 eggs
2 spring onions
1 tsp salt

Preparation - Steps

Heat the olive oil in a frying pan over high heat and saute the minced meat.
Do not stir the minced meat all over. Turn each piece so as to saute both sides. Once it turns golden brown, add the paprika, chilli and salt.
Lower the heat and break down the minced meat. Take the frying pan down from the fire, add the cream cheese and stir.
Add the graviera, ground, and 1 egg to the minced meat while hot, so as to thicken.
Add a little fresh thyme and leave it aside to cool down.
Lay half the pizza crust on a baking pan and add the minced meat, leaving 1 cm border. Lay the remaining pizza crust over it and press the edges to seal it. Open a few holes on the surface with a fork.
Bake at 200οC until the dough rises.
A little before the pie is ready, take it out of the oven, sprinkle more ground cheese and the minced spring onions, and pour 2 eggs.
Return the pie to the oven, on the top rack, for the eggs to become soft-boiled.
