Ανοιχτή Κρεμμυδόπιτα με Σύγκλινο

Open Onion Pie with Sygklino (Cured Meat from Mani)


8-9 KANAKI Chilled COUNTRY STYLE Filo Pastry
2 onions, in rings
150 gr. sygklino, cut in small bits
50 gr. butter
200 gr. goat sour cheese
1 egg
3 tbsp yoghurt
1 tsp nutmeg
1 tsp sage, minced
2 tomatoes, sliced
Olive oil

Preparation - Steps

Saute the onions in the butter for approx. 5 min, add the sygklino and saute for another 3 min. Leave the mixture to cool down and add the sour cheese, egg, yoghurt and sage. In a 33x24cm baking pan, lay the sheets so that they reach over the baking pan. Pour the mixture and carefully fold the sheet edges. Spread the tomato slices on top and sprinkle with a little olive oil. Bake in a preheated oven at 180°C, for approx. 40 min.
