Ingredients
For the base:
1 sheet of KANAKI PUFF Pastry
1 egg yolk (for brushing)
For the cream:
200 g cream cheese
70 g honey
2 eggs
1 tsp vanilla extract
120 g Greek strained yogurt
1 tbsp cornstarch
For the apples:
4 apples, peeled and thinly sliced (2 red and 2 green)
40 g butter
3 tbsp honey
1 tsp cinnamon
A pinch of salt
1 tbsp lemon juice
Preparation - Steps
Preheat the oven to 190°C (375°F). Spread the puff pastry in a baking pan and prick the base with a fork. Cover with parchment paper and baking weights, and pre-bake for 10–12 minutes. Remove the parchment and weights, and brush the base with the egg yolk. Lower the oven temperature to 180°C (350°F).
Prepare the apples: in a pan, melt the butter and add the apples, honey, cinnamon, salt, and lemon juice. Cook until the apples soften slightly. In a bowl, whisk the cream cheese with honey, then add the eggs, vanilla, yogurt, and cornstarch until smooth.
Pour the cream over the pastry base and arrange the apples on top. Bake for 35–40 minutes, until golden and set. Let it rest for 20 minutes before slicing.
