Πατσαβουρόπιτα Σουφλέ με Κίτρινα Τυριά

Patsavouropita (Rug Pie) Souffle with Yellow Cheese


(for 8-10 people)

For the pie:
1 package KANAKI FILO Pastry
500 gr. yellow cheese (kasseri, regato, kefalotyri, graviera)
100 gr. butter (melted)
4 eggs
400 ml milk
330 ml soda (refreshment)
1 tbsp white sesame
1/2 tbsp black sesame
Freshly ground pepper

Preparation - Steps

For the pie:
Lay all the pastry sheets in the package horizontally and fold them into a roll.
Cut the roll vertically, in many thin strips and then divide them between them and open the sheets in separate strips.
Let them dry, without covering them, for approx. 6 hr, at room temperature.
In a bowl, add the milk, melted butter, lightly beaten eggs, pepper, soda and all yellow cheese (grated).
The, add the pastry sheets to the mush.
Stir well and empty the mixture into a fire-resistant pan (approx. dimensions 23cm x 32cm).
Finally, sprinkle with the white and black sesame.
Bake in a preheated oven at 180°C , in air, for 35 min, until the souffle rises and turns golden brown.
Leave the souffle to cool down for 15 min and serve
