Shortcrust Spinach Pie Pastry in AirFryer

Ingredients

450g KANAKI SHORTCRUST Pastry
1 tbsp olive oil (for brushing)

For the filling:
1 onion, finely chopped
2 cloves garlic, minced
300g spinach (fresh or frozen)
100g ricotta cheese
100g feta cheese, crumbled
2 eggs
Salt and pepper to taste
1 tbsp olive oil (for sautéing)

Preparation - Steps

Prepare the filling:
Heat 1 tbsp olive oil in a pan and sauté the onion and garlic until soft. Add the spinach and cook for a few minutes until wilted (if using fresh spinach) or thawed (if using frozen). Once the spinach is cooked, remove excess moisture if needed. Let it cool down slightly. Mix in the ricotta, feta, eggs, salt, and pepper until everything is well combined.

Assemble the pie:
Roll out the shortcrust pastry on a flat surface and cut it into circles or squares, depending on your preference. Place a spoonful of the spinach mixture in the center of each pastry. Fold the edges to enclose the filling, creating a pocket or pie shape. Brush the top with olive oil.

Cook in the AirFryer:
Preheat the AirFryer to 180°C (350°F). Place the spinach pies in the AirFryer basket, ensuring they aren't overcrowded. Cook for 10-15 minutes or until the pastry is golden brown and crispy.

Serve:
Remove from the AirFryer and let cool slightly before serving.
