Cheese-filled pastries – Flaounes

Ingredients

For the dough:
1 package KANAKI PIZZA Dough
2 tbsp sesame seeds (optional, boiled)

For the filling:
1 cup grated sweet graviera cheese
1 cup grated halloumi cheese
1 cup fine semolina
½ tsp dry yeast
½ cup black raisins
10 leaves of fresh mint, finely chopped
½ tsp mastic, crushed with a little sugar
½ tsp mahlab
3 eggs

For the topping:
2 eggs
A little water
2 tbsp sesame seeds (optional, boiled)

Preparation - Steps

Preparing the Filling:
In a large bowl, mix together the graviera cheese, halloumi, semolina, yeast, and raisins.
Add the chopped mint and mix well.
Crush the mastic with a little sugar to help it dissolve, then add it to the mixture.
Add the eggs and mahlab, and stir until well combined.

Shaping the Flaounes:
Cut the dough into square pieces.
Roll out each piece lightly with a rolling pin to thin it out.
Place one spoonful of filling in the center of each square.
Fold the edges towards the center, leaving a small opening to reveal part of the filling.
Press the corners with a fork to seal them and prevent opening while baking.

Coating and Baking:
In a small bowl, whisk the eggs with a little water.
Add the boiled sesame seeds for a softer texture.
Brush the flaounes with the egg mixture, ensuring it does not drip onto the base, as this may cause burning or excess moisture.
Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, until golden brown.
