In Northern Greece, as well as on some Greek islands, home cooks traditionally prepared a thin pastry roll filled with a savory mixture. The roll was then arranged in a spiral shape inside a baking pan and baked in the oven.

The result was a pie with golden-brown pastry, crispy on the outside and soft on the inside, filled with delicious, flavorful fillings. KANAKI Spiral Pies, made with traditional country-style pastry and wonderful fillings, offer an irresistibly delicious experience. They can be enjoyed either cut into triangular slices or simply by slowly unrolling them piece by piece.

The city of Thessaloniki made Bougatsa legendary. Made with delicate “air pastry,” skilled artisans would stretch the dough by spinning it in the air, creating an exceptionally thin and crispy pastry sheet.

Bougatsa is an entire category of pies made with this distinctive pastry. KANAKI Bougatsa features thin, crispy, golden pastry folded into a sealed parcel and filled with a velvety semolina cream infused with vanilla aroma.
